Advanced Professional Chef students at North Kent College’s Gravesend campus were treated to an inspiring and insightful workshop last week, led by a representative of the world’s largest cheese and dairy company.
Rory Larkin, Registered Nutritionist and Professional Development Chef at Lactalis UK & Ireland, gave the students the benefit of his 13 years of experience across the hospitality, media, sports and education sectors.
Rory’s extensive knowledge and his ability to transform complex nutritional theory into practical, creative culinary ideas, shone through and his visit gave students a valuable opportunity to learn from an expert working at the forefront of both gastronomy and nutrition.
During the session, Rory explored the fascinating world of cheese, from texture and flavour profiles to the science behind taste. Students took part in sensory tastings featuring a variety of cheeses, including the creamy elegance of Brie and the bold character of Roquefort. He demonstrated how different cheeses can enhance dishes both nutritionally and gastronomically, while showcasing innovative ways to incorporate them into modern menus.
Rory also shared his passion for sustainable food strategies and his holistic approach to menu development, encouraging students to think beyond presentation and flavour, and consider the nutritional impact and sustainability of their dishes.
